30 Days of Holiday Goodies: DIY Peppermint Patties

Last year, I made these delicious peppermint patties - a recipe I found on Thoughts and Ideas, via Creature Comforts/Carrying On.
The recipe is super-easy, with just a few ingredients:
2 cups powdered sugar
3 tablespoons light corn syrup
2 tsp water
1 tsp peppermint extract (or 1/4 tsp peppermint oil)
8 ounces bittersweet chocolate
powdered sugar for dusting
The process is simple.
After dusting two parchment-lined baking sheets with powdered sugar, combine the corn syrup, water, and peppermint oil/extract in a bowl. Stir in the powdered sugar until everything is mixed, and then knead the pieces into a ball. It seems very dry at first, but it will mush together well to a nice consistency.
Place the ball of mint onto one of the lined baking sheets, and with a powdered sugar-dusted rolling pin, flatten the ball to 1/4" thick. Use a dusted round cutter (I used a juice bottle cap - I didn't have a round cutter small enough). Place the cut patties on the other baking sheet to dry for at least 4 hours.
After they are dry, you can use a fork or your fingers to dip them in melted chocolate (I used a bowl of chocolate pieces in the microwave for 90 seconds, stirring at 30 second intervals). They harden pretty quickly, and are delicious immediately.
