Homemade Pancake Mix and Batter

I love the convenience of store-bought pancake mix, but sometimes I'm creeped out by ingredients listed on the box. Without giving up the idea of "instant" pancakes, it's easy to make your own ready-to-go pancake mix!

This recipe yields three batches of pancakes. 1 cup of dry mix will yield 3 large or 6 smaller pancakes. Use the entire recipe to produce about 10 large pancakes or 18-20 smaller pancakes.


ingredients

3 cups of white or whole wheat flour (or go half-and-half)
1 tsp salt
3 tablespoons granulated sugar
1.5 tablespoons baking powder

Mix the above ingredients together in a bowl. Use immediately, or store in an airtight container or mason jars. Tip: this mix, along with a recipe on a gift tag, makes a great gift when packaged in a mason jar.

Mix-ins

Delicious ways to flavor these pancakes include:
- 1/2 cup blueberries per 1 cup dry mix
- 1/2 cup raspberries per 1 cup dry mix
- 1 tsp cinnamon per 1 cup dry mix
- 1/2 cup chopped apples + 1 tsp cinnamon per 1 cup dry mix


directions

Per one cup of dry mix: combine dry pancake mix, 1 egg, 1/4 cup canola oil, and 1 1/2 cups milk; mix well. If mix is a bit too dry, add a little more milk. Add in any desired mix-ins. Pour onto greased griddle and flip pancakes when bubbles start to surface on cooking pancake.

  2. I've made refills for my mason jar of this mix twice already! My fiance was always a Bisquick guy and didn't realize how easy homemade pancakes are. Love how they turn out, thanks for the recipe.
